Chickpea Flour Pancakes

What you need:

  • 250g chickpea flour/lentil flour/gram flour
  • pinch of salt
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon bicarbonate of soda
  • ¼ teaspoon ground cumin
  • 1 tablespoon natural yogurt
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 tablespoon chopped fresh coriander
  • 4-5 tablespoons vegetable oil

What you do:

  • Put the flour, salt, ground turmeric, bicarbonate of soda, ground cumin and yogurt in a bowl. Mix well with enough water to make a smooth, slightly thick flowing batter.
  • Stir in the onion, tomatoes and coriander.
  • Heat a tablespoon of oil in a frying pan. Make sure the heat is not too high. Pour in some of the batter until the bottom of the pan is covered. Cook the pancake for 2-3 minutes until brown.
  • Turn the pancake over and cook the other side. Put the pancake onto a plate and cook the others in the same way.

Remember: Always ask an adult before you start cooking. Take care when using knives and hot cookers. Wash your hands before you start cooking and after handling spices.
